I have a newfound appreciation for Pioneer Woman

If you're just joining us today, we're blogging while we cook – anything to make it a little less onerous and a little more fun.

I've decided it's impossible to cook and take pictures at the same time, for me anyway. I had to interrupt this recipe to remove mashed potatoes from the shutter release. At least Smooch was kind enough to keep me company and keep the floor clean as I worked.



I've never made this recipe before – Spinach and Herb Mashed Potato Casserole. It's a time-honored tradition in the Carson family to always try out new dishes on unsuspecting guests.



Smooch thinks it smells pretty good, and with all the butter, cream cheese and sour cream it includes, how could it be bad?

Next up...Spinach, Red Pepper and Feta Quiche.

  2. mmmmm.....I think I caught a whiff of that myself. Looks & sounds very yummy. I'm sure Smooch wouldn't mind being the Royal Taster for you, vetting all the new dishes before they're presented to your guests.

  3. I like your style of cooking. It looks like my place. I always think if you try something new on guests you are on an adventure and even if it doesn't turn out who cares? I like inviting people over and ask them to give me a hand with cooking too.
    That dish looks like a keeper. Enjoy your Christmas dinner, Carson and hey give the dog a little bite too.
    I saw a fridge magnet once that said "Martha Stewart doesn't live here".

  4. OMG -- you are making me hungry, and guilty. Here I sit at work in an almost courthouse. I am earning money but not getting any of tomorrow's feast done.
